The Howitzer 105mm takes its name from the piece of artillery, similar in style to the French 75mm used during the great wars. Transforming the cocktail from a classic French 75 to Howitzer 105. The 105mm variation shares some commonalities with the classic.
Howitzer 105mm Recipe
1.50 parts Tanqueray No. 10 Gin
0.50 parts Lemon Juice
0.50 parts Lavender Syrup*
1 dash Bittered Sling Orange & Juniper Bitters
4.00 parts Moet & Chandon Brut Rose Champagne (other options include Blue Mountain Brut Rose or Cordonìu Brut Rose Cava)
Shake ingredients quickly (except the bubble) in a shaker with ice. Strain neat into a champagne flute, champagne saucer or white wine glass. Top with bubble, and garnish simply with a fancy lemon twist, expressing the oils over the surface of the cocktail and the glass, before dropping into the cocktail.

Lavender Syrup - yield 500mL
300mL organic cane juice crystals (or white berry sugar) 300mL water
10g blue lavender flowers
Bring water and sugar to a slow simmer and shut off from the heat – do not boil, this is just to dissolve and combine the sugar/water together. In a heat safe container, using a mallet or muddler, smash the dried lavender flowers until the essentia oils and blue powder releases. Pour the water/sugar mix over the flowers – do not stir. Allow the flowers to infuse their flavour. After 2 minutes, strain through a fine sieve. Add the syrup to clean, food-safe bottles. Store in the fridge up to 7 days.
