The Barracuda is a cocktail Lynnette and Jess Gonzalez created for the original cocktail list at the Llama Inn in Brooklyn. It's a variation on the Paper Plane, substituting Sherry for Amaro Nonino- maintaining classic structure, but with a twist.
Speedrack is curating the first Ladies Night Only event for this year's New York Wine and Food Festival, and will be serving the Barracuda at the event.
1 part Bourbon (I used Bulleit)
1 part Lemon Juice
1 part Aperol
1 (scant) part Lustau Oloroso Sherry
.25 parts Simple Syrup
Build ingredients in a mixing glass or tin. Add ice, shake 10-15 seconds, and strain into a coupe or up glass. Garnish with a lemon wheel.
